3 medium sized sweet potatoes

1 red onionfinely chopped

1 courgette

4 Large eggs

2 tbsp extra virgin olive oil

1/2 cup red bell pepper

1/2 cup green bell pepper

1/4 tsp smoked paprika

as needed for seasoning sea salt

as needed for seasoning ground black pepper

15g spring onionfinely chopped
Directions
Instructions
- Preheat oven to 190 degrees Celsius
- Heat a large 10-inch skillet over medium heat
- Add extra virgin olive oil and once hot, add red onion and sauté
- Add sweet potatoes and stir until potatoes are tender for about 4-6 minutes whilst adding ½ teaspoon sea salt and ¼ teaspoon black pepper
- Add courgette and red and green bell peppers and sauté for another 2-3 minutes adding paprika and stir to combine
- Make four indents to place the eggs separately
- Transfer the pan to the oven and bake for about 8-10 minutes until the eggs begin to set
- Remove pan from the oven and garnish with spring onion and some salt and pepper as desired and necessary
Tips:
- I prefer my eggs baked over easy
- Don’t overbake the eggs!
