400g MU Waco Veg medleypre-washed and pre-cut

400g MU pulled porkpre-cooked

250g MU rice noodlespre-cooked

2 packets MU pork brothpre-prepped

- To prepare the soft boiled egg, first boil water in a pot adding a little salt (as this helps prevent the eggs from breaking)
- Once water is boiled, add your eggs gently and boil for approximately 6-7 minutes if you want a soft-boiled egg. Remove the pot from fire and pour cold water to stop the eggs from continuing to cook and set aside.
- Whilst the eggs are boiling, in a separate pot, heat 2 tablespoons of olive oil over medium heat. Add the MU Waco veg medley and sauté until they begin to soften, for about 5 minutes.
- Add perhaps a small splash of water halfway through, if needed.
- Add pulled pork and sauté for 2-3 minutes only.
- Add the pork broth and increase the heat to boil for 5 minutes.
- Add the rice noodles towards the last 1 to 2 minutes of the boil.
- Pour soup into individual bowls and serve with a sliced egg on top. Done!
