1 kg fresh green beans

2 large red onionchopped

2 cloves garlic clovesminced

6 medium-sized organic ripe tomatoes

1 vegetable cube stock

2 carrotschopped

1 tablespoon tomato paste

3 tablespoons extra virgin olive oil

2 large Potatoespeeled and cubed

1/2 cup parsleychopped (optional)
Directions
Instructions
- Prepare the beans by washing and draining them first. Carefully cut off the tips and remove any stringy fiber along the seam.
- In a large pot, over medium heat, warm the olive oil and cook the onion until tender. Stir in the minced garlic and cook with onions.
- Then, gently pour in the chopped tomatoes and tomato paste. Make sure the tomatoes start to cook and soften.
- Add the green beans and toss to coat in olive oil and tomato sauce.
- Add potatoes, carrots, vegetable stock, salt and pepper.
- Add enough water to cover the green beans.
- Cover and simmer for 45 minutes, or until the beans are tender. Before removing from the heat, stir in the parsley and adjust seasoning with salt and pepper, as desired.
- Serve hot.
Tips:
- Us Mediterranean peeps, like to sometimes add crumbled feta on top for some extra cheesy saltiness.
