3 large ripe bananas, mashed

4 large organic eggs, whisked

1/4 cup honey

1/4 cup lactose free milk or unsweetened almond milk

1 tablespoon vanilla extract

1 tablespoon ground organic flaxseed

2 teaspoons baking soda

2 cups gluten free flour
-
1/4 - 1/2 cup chopped walnuts

1/2 teaspoon sea salt

1/2 teaspoon cinammon

1/4 cup almond flour
Directions
Instructions
- Preheat oven to 180 degrees Celsius
- Grease and flour the loaf pan with gluten free flour
- First combine the wet ingredients in a bowl and whisk, then set aside
- Then, combine all the dry ingredients in a separate bowl and whisk
- After both are separately whisked, add the wet ingredients to the dry and combine
- Pour combined mixture into the greased and floured loaf pan and bake for approximately 40 – 50 minutes (between the last 10 to 15 minutes, check every few minutes with a knife until the knife comes out clean!)
Tips:
- Although optional, I sometimes add 2 slices of sliced banana cut in half on top of the mix so that its cooked with the banana sliced on top.
- Otherwise, I dice some Bourneville dark chocolate on top so that after the bread is cooked, you are left with melted chocolate pieces on top – you will not be sorry 😉
