Ingredients

3 large ripe bananas, mashed
4 large organic eggs, whisked
1/4 cup honey
1/4 cup lactose free milk or unsweetened almond milk
1 tablespoon vanilla extract
1 tablespoon ground organic flaxseed
2 teaspoons baking soda
2 cups gluten free flour
1/4 - 1/2 cup chopped walnuts
1/2 teaspoon sea salt
1/2 teaspoon cinammon
1/4 cup almond flour

Instructions

  1. Preheat oven to 180 degrees Celsius
  2. Grease and flour the loaf pan with gluten free flour
  3. First combine the wet ingredients in a bowl and whisk, then set aside
  4. Then, combine all the dry ingredients in a separate bowl and whisk
  5. After both are separately whisked, add the wet ingredients to the dry and combine
  6. Pour combined mixture into the greased and floured loaf pan and bake for approximately 40 – 50 minutes (between the last 10 to 15 minutes, check every few minutes with a knife until the knife comes out clean!)

Tips:

  • Although optional, I sometimes add 2 slices of sliced banana cut in half on top of the mix so that its cooked with the banana sliced on top.
  • Otherwise, I dice some Bourneville dark chocolate on top so that after the bread is cooked, you are left with melted chocolate pieces on top – you will not be sorry 😉
