1 large ripe bananas, mashed

2 large organic eggs, whisked

1/4 teaspoon baking powder

2 tablespoon gluten free oatsoptional

Berry Compote

3 cups fresh mixed berriesor frozen

3 tablespoons orange juice

1/2 teaspoon grated lemon zest
Directions
Instructions
- Mash the banana in a bowl. Then, add eggs and baking powder and mix.
- Although optional, add cinnamon and oats and mix batter well. Set aside while you prepare the berry compote.
- Place fruit, lemon zest and juice in a separate small saucepan and bring to medium heat.
- Once it starts to bubble, reduce heat and use wooden spoon to mash the fruit. Continue cooking for another 10 minutes. While this is cooking start on the pancakes. After the 10 minutes have passed, remove the compote from heat and let it cool down slowly.
- For the pancakes, heat butter in a separate pan over medium heat and spoon the batter into the hot butter and cook for 2-3 minutes. Flip and cook on the other side for 2-3 minutes.
- Repeat with remaining batter.
Tips:
- Add some freshly grated lemon zest on the berry compote topped over the pancakes and some fresh mint, if you have some 😉
