Ingredients

1 kg fresh green beans
2 large red onion chopped
2 cloves garlic cloves minced
6 medium-sized organic ripe tomatoes
1 vegetable cube stock
2 carrots chopped
1 tablespoon tomato paste
3 tablespoons extra virgin olive oil
sea salt
ground black pepper
2 large Potatoes peeled and cubed
1/2 cup parsley chopped (optional)

Instructions

  1. Prepare the beans by washing and draining them first. Carefully cut off the tips and remove any stringy fiber along the seam.
  2. In a large pot, over medium heat, warm the olive oil and cook the onion until tender. Stir in the minced garlic and cook with onions.
  3. Then, gently pour in the chopped tomatoes and tomato paste. Make sure the tomatoes start to cook and soften.
  4. Add the green beans and toss to coat in olive oil and tomato sauce.
  5. Add potatoes, carrots, vegetable stock, salt and pepper.
  6. Add enough water to cover the green beans.
  7. Cover and simmer for 45 minutes, or until the beans are tender. Before removing from the heat, stir in the parsley and adjust seasoning with salt and pepper, as desired.
  8. Serve hot.

 

Tips:

  • Us Mediterranean peeps, like to sometimes add crumbled feta on top for some extra cheesy saltiness.
