Ingredients

240g Sweet Potato and Pumpkin Chunks cooked

400g Misfit Lentils

300g Misfit basmati rice

200g Korma karma sauce

2 tablespoons olive oil

2 tablespoons, grated gingeroptional

half, finely chopped onionoptional

1 small, finely chopped courgetteoptional

Instructions
- Chopping up and preparing the ginger, onion and courgette is completely optional if you want to add an extra kick and some extra veg to your quick and easy curry dish!
- Heat oil in pan
- Add onions, courgette and ginger and sauté for about 5 minutes until tender
- Add the pre-cooked Misfit sweet potato and pumpkin chunks
- Add the cooked Misfit lentils
- Stir them until mixed and lightly heated up
- Add the korma sauce and about 30ml drinking water.
- Turn temperature to a low heat temp and and let the magic simmer for about 10 minutes.
- While the above is simmering, stir fry the Misfit basmati rice (adding a a few tablespoons of water so as to not burn the rice) for 3 minutes on low heat or empty pouch on a microwaveable plate and microwave for 2 minutes.
- After the 10 minutes lapse turn off the heat and place the lid on the pan so that it can soak up all the juices and spicy flavours
- To plate, first add the rice and then the sauce over the rice.
- Top with slivered almonds, coriander leaves and serve with lime wedges (optional)
Tips:
- Optional: As mentioned above, the extra veggies (ginger, courgette and onion) is optional so without the prep of these veg, the actual dish takes just under 30 minutes in total- hurray! 😉
