250g halloumi cheese

300g fresh unsalted anari cheese

100g cheddar cheese

250g strained Greek yogurt

270g gluten free flour
-
180g olive oilor peanut oil

3 tsp baking powder
-
3 Large eggs
-
2 tsp dried mint
Directions
Instructions
- Preheat oven to 160 – 180 degrees Celsius
- In a separate bowl chop up the halloumi and anari into cubes
- Grate the cheddar cheese and pour into bowl with the rest of the cheese
- In the food processor, pour the yogurt and baking powder and pulse for 3-5 seconds to mix evenly
- Add the oil, flour, eggs and mint into food processor and pulse until mixture is evenly mixed
- Pour the mixture into the bowl of cheeses and mix evenly with a spatula
- Transfer mixture to a parchment paper lined 8×4 baking pan
- Bake in preheated oven for 50 – 60 minutes
- Let it cool and then slice it into even pieces before serving.

Tips:
- Optional: Although optional, you can switch the anari cheese for feta cheese and could switch cheddar for gouda cheese 😉
- Oils: Feel free to sub peanut oil with olive oil
- Remember: I prefer to not use anari cheese because halloumi is already quite salty.

Which gluten free flour do you use for this recipe, self raising, plain or bread flour? Thank you

Could the fresh anari cheese be substituted by ricotta? In Spain I cannot get anari 🙁
Yes of course – since anari cheese is a fresh ricotta style soft, mild whey cheese, made from goat or sheep’s milk, the texture and flavour very much resembles ricotta cheese, so it can definitely be substituted 🙂
