Eggplant and Tomato Oven Bake with Feta Cheese

Eggplant and Tomato Oven Bake with Feta Cheese

Ingredients

Adjust Servings:
3 large eggplants sliced
3-4 large ripe tomatoes grated or finely chopped (or 500g tinned tomatoes)
1 red onion
3-4 garlic cloves minced
2-3 stalks fresh basil
1/3 cup parsley chopped
1 tsp dried oregano
2 tsp tomato paste
150-200g feta cheese crumbled
6 tbsp extra virgin olive oil
to taste, as necessary sea salt
to taste, as necessary ground black pepper

This dish makes a great appetizer or side dish, although I tend to serve this as a main course casserole served with rice and salad.

    Instructions

    1. Preheat oven to 180 degrees Celsius
    2. Cut eggplants (aka. aubergines) into ½ inch thick slices and lay slices out on a baking sheet. Salt the slices and set aside
    3. After 20 minutes pat the top of each slice with kitchen paper towel to remove any moisture as well as excess salt
    4. Lightly brush each slice with olive oil and place in the oven for 20 minutes and turning slices onto other side after the first 10 minutes
    5. Simultaneously, in a pan over medium heat sauté finely chopped onions and minced garlic for about 5 minutes
    6. Lower the heat to medium-low and add tomatoes, paste, parsley, oregano, salt and pepper. Let this simmer for about 20 minutes.
    7. Remove tray from oven and top the eggplant slices with the tomato mixture and some crumbled pieces of feta.
    8. Bake in the oven for about another 15 minutes until the cheese begins to soften.
    9. Remove from oven, top with more feta (if you want) and chopped basil and serve.

    Tips:

    • If needed: If the mixture starts to look a little dry feel free to add a little water or a splash of white wine!
    • Optional: As I love veggies, I sometimes add sliced zucchini to the mix also – try it if you want to add more greens to the dish!
    • Also: be careful with adding salt as feta cheese is already salty.

    This was the first recipe I cooked from Exploring Flavours and I was not at all disappointed! Simple but very yummy as either a side or main dish. I can’t wait to try the other recipes! 😀
