1 bunch wild asparagus

1/2 red onionfinely chopped

1 garlic clovesminced

6 large organic eggs, whisked

2 tbsp extra virgin olive oil

1/2 lemonjuiced

1/2 tsp sea salt

1/4 tsp ground black pepper

Instructions
- Prepare the wild asparagus by snapping the tips of the asparagus to 4-5 cm length(about 2/3 of each asparagus). Wash and set aside.
- Whisk the eggs lightly in a small bowl.
- Place a large sauce pan on medium heat and when hot drizzle the oil. After about a minute add the asparagus, red onion (and garlic) and toss for approximately 5 minutes. Add the lemon juice and stir for another minute.
- Add the eggs, sea salt and pepper, stir, lower the fire and continue cooking for approx 1-2 minutes, while stirring, until the eggs have been cooked and serve.
Tips:
- As wild asparagus is bitter in flavour, some prefer to boil the asparagus slightly for a couple of minutes prior to sautéing them in olive oil. Up to you 😉
- Although optional, I love adding ½ a bunch of fresh spinach as well, because the more veg the merrier!
